    What cut of beef shortribs

There are to main cuts the chuck and the plate

The chuck  is from the shoulder and has less fat but tends to be more meaty but not as tender as it does not have as much fat

Back ribs is another potions they come from closest to the spine and tend to have the least meat but are very tender tender from what they do and being close to the loin

The plate ribs is a cute from the lower belly so it has more fat so it tend to me more tender and flavorful

Both are amazing just try and pick ribs that don’t have a lot of surface fat and had a nice color as the ribs are the star of the show and if there not good it will though the whole dish off

Shot ribs have been plated they have a nice dark color a few onions made it out as well

    Frequently asked questions

Do I really have to cook it on low?

Yes you should cook it one low the meat need to cook slowly. Normally you need to get the ribs to 160f to start breaking down so that they are tender but if you get the meet to hot it will start to get tough again. So low is perfect as it cooks at about 210

    Storing and heating

    Storing

    • You can stir up to 3 days in the fridge but but normally we don’t have them last that long

    Reheating

    • Stove heat on stove top with a little bit of water or broth or apple juice to help the meat not dry out over medium heat  tell it is heated though
    • Micro wave heat slowly in the microwave with a small amount of broth or apple juice to help meat provent from drying out
Short ribs have been added to play with onions and mashed potatoes the gravy has been added on to the mashed potatoes
