German Pancake Recipe Cast Iron

Ever since I can remember German pancakes have been one of my favorites for breakfast. It is a simple and fluffy golden pancake that only takes a few minutes to prep and you most likely already have these simple ingredients in your kitchen to make Cast Iron German Pancakes. 

German pancakes come with many different names: Dutch baby, a Bismarck, a Dutch puff, a Hootenanny, or a  popover. Even with so many names it is my understanding that it all started in Germany. Part of the reason for the confusion appears to come from the German word Deutsch meaning German.

Why you will love them

We made these the other day and even the pickiest eater in the family enjoyed them and had two helpings. It is always a nice surprise when he eats things as sometimes he won’t even eat foods that we think are his favorites.

Variations 

Change the flour that you are using. We use all-purpose white flour or you can use wheat flour for a little healthier option. This is at least what my mom says. This will make it in my experience not as fluffy

Change up the toppings: This is powdered sugar in our family but you could try Syrup, jam, berries, chocolate, or cinnamon 

Ingredients 

Eggs – give flavor and form to the pancake

Flower- thickens the mixture and helps add to the flavor

Milk- helps with the smoothness and fluffiness of the pancakes 

Butter- helps keep the pancake from sticking to the pan and adds to the amazing flavor

Salt – helps to enhance the flavors and I have been told it helps with the chemical reaction

Vanilla – helps add additional flavor

Blueberry- added as a topping to add color, freshness, and flavor(optional)

Ingredients

  • 3 eggs
  • ½ cup all-purpose flour
  • ½ cup milk
  • Vanilla
  • Sugar
  • Dash of salt
  • 2 tablespoons butter
  • 1 tablespoon powder sugar topping 
  • ¼ cup blueberries

Preheat the oven to 450. When the oven is close to being heated all the way, put the butter in the pan to melt wait heating up, don’t leave it in too long or it could burn and will not taste good. Just long enough for the butter to melt all the way

While the oven is preheating and the butter is melting, begin mixing the other ingredients together.

First add dry ingredients flour, sugar, and salt and mix well. Then you can add the milk and vanilla.

Once that is mixed all together, add the eggs. IMPORTANT: The secret to the fluffy fun is to not over mix the eggs. This allows each of the components to do its magic.

Now that you have your batter and the butter is melted, pull the pan out and pour the batter in.  Place the pan back in the oven. Cook it for about 15-17 minutes until it is perfectly golden. Cut it, plate it, decorate it with your favorite toppings (my favorite is powdered sugar), and wallah! Your masterpiece is done. Enjoy.

Tips and tricks

Eggs –  you will want to beat the eggs so that they are mixed only enough for them to be combined this will help the pancakes be fluffier 

Flour-  you can use wheat  or white flour for the best  results we recommend that you use white all-purpose flour 

Preheating know that some people say to put butter in the mixture  and mix it in The best results we have had is when we put the butter in the pan and when the oven is close to preheated you put the pan in and let the butter melt in the pan once it is melted pull out of the oven and then quickly pour the mixture in the pan and put back in the oven

    These are always so fun to have and it was nice to be reminded of all the name. I have had friends ask if I want some with different name and it is always sure but then we they make it is I know what that is and it is so good.

    I noticed you didn’t put any baking powder in this recipe. Was this an accident or do you not use any baking powder or baking soda?

      That is correct I have never use baking powder in this recipe. I most of the recipes that I have looked at for these I have seen it either. And traditionally I understand it was not used either. Thank you for asking though

    Do you beat the eggs first? Then mix in?

      Mix the egg and milk together and then mix with the dry ingredients

      For the image we used a 12 inch. But we also have used a 9 inch cast iron that works well it tends to have more ripples and side are higher

    This tasted great! Like a French Toast without all the bread! Added Blueberries to half the pan but both sides tasted really good. Will definitely make this again. Used a 10 in Cast Iron pan and everything came out perfect.
