    Homemade Beef Enchiladas Recipe

    This is an amazing flavorful recipe that has an amazing red sauce. Each enchilada is full of amazing. Home made beef enchiladas are simple to make and can be made in about an hour

    Meat is in the pan had cooked a bit and has been broken up and salsa has been added as well as seasoning

    Variations you may like

    • Make it Spicy: by adding jalapeño and a little chili powder
    • Change up the broth: you use we like the flavor of the chicken 
    • There are other changes that you could make but that would make for a completely different recipe and would not be a change that we have tried
    • You also switch to a chili base for that sauce

    Ingredients you will need 

    • pound ground beef- this is the protein for the meal and helps give a nice flavor 
    • Salt and pepper to taste- help bring out the meat flavor and other flavors of the meal
    • Seasoning - we like to use the grill master mojito lime marinade mix
    • salsa - we normally use the la Mexico mango salsa or the mild 
    • bell small  peppers - helps add some color and added some great flavor
    • corn tortillas  - they are just the right size and have a great flavor. And if you have people that can be great as well
    • tomato paste - is the base of the sauce. Give great flavor and color
    • chicken broth- has a great flavor you can use any broth you like
    • Garlic powder- like the flavor that it adds
    • Red pepper- it may add a little color but mostly it just adds a little heat 
    • red onion diced- adds some nice flavor and as it is a red onion when you can see them they added a nice red color
    • Cheese- we normally just use cheese but you can also use a Mexican blend  or any melty cheese
    • Cooking oil- we like to use vegetable oil to Cooke the tortillas you can use most cooking oil or fat to do this

    How to make 

    • Start: gather everything that you need to make jt
    • Cook the filling: start cooking the meat and add the spice. Once the meat is about halfway cooked add the salsa onion and peppers as they don’t need to be cooked as long
    • Make the sauce: tomato paste, broth, red pepper, and opponent powder in the blender and blend
    • Prep: heat the tortillas in a pan in some oil so that they don’t break. After heating a few add the filling wrap them up and put them in the pan repeat as needed
    • Then pour sauce over the top
    • Bake:  put in the oven at 350 for 20 minutes then pull out and add cheese over top and then put back in I for 10 minutes or till cheese is melted

    How to store and reheat!

    Place it in an airtight container for 3 to 5 days or you can put it in the freeze and save it for up to a month

    How to reheat

    If you are doing a small batch just microwave it but if you're doing a large batch I think it turns out a lot better in the oven at 350 for 15 minutes 

    Can you make an ahead of time?

    I wouldn't recommend it on this one as if it sits in the sauce the soggy the tortillas will get. 

    There are normally two types of sauce for enchiladas there is red sauce which is what we use for this recipe that normally has a tomato base some are starting to have pepper as the base though but they tend to be more spicy. Then you also have a green bad that uses peppers as the base  

    Sauce is poured over the enchiladas and is ready to go in the oven thr pan is about half full to thr top but had enchiladas form side to side

    FAQ

    Can you use flour tortillas?

    Yes, you can use flour tortillas. Corn is more traditional and some Polen say that one difference between burritos and exchanges is the corn for enchiladas and flour for burritos the other main difference is that enchiladas have sauce smothering them which is why they will ask you if you would like your burrito enchiladas style

    Can you use a casserole dish?

    Yes but you probably will want to make a double batch so that it feels up the pan

    Should I Cooke covered or uncovered?

    I don't know about other recipe but this one you should cook in covered

    Do I have to heat my tortillas ?

    Yes if you don't eat them up they will break in the folding process hesing up with oil or sauce out my two favor ways

    Ingredients
      

    Filling
    • 1 pound ground beef
    • Salt and pepper to tast
    • ½ tb grill master mojito lime marinade mix
    • ¼ cup la Mexico mango salsa
    • 3 bell small peppers
    • ½ red medium onion diced
    • 9-10 corn tortillas
    • Cooking oil
    Sauce
    • 6 oz can can tomato paste
    • 6oz chicken broth
    • Garlic powder
    • Red pepper
    Top
    • 1 ½ cups cheese

    Equipment

    • skilet
    • 7x 9 casserole dish optional (just fits every thing so nicely)

    Method
     

    Filling
    1. Cooking oil Cooking the inside
    2. Gather all the ingredients so that you're not running around trying to get everything and make it a lot easier.
    3. Start browning meat at medium heat.
    4. Once the meat has browned a bit add the salsa onion and bell peppers a dm let it all cook together.
    5. Mix occasionally
    6. Pull meat out of the pan
    Making the sauce
    1. Added tomato past broth and seasoning into a blender and let mix together takes about 30 seconds. Let mix tell it is smooth
    2. Preparing tortillas
    3. if there is still oil in the pan toast the tortillas if not add oil as needed to taste do a few at a time and then make enchiladas so they don’t cook down too much repeat as needed
    Making enchiladas
    1. add meat mixture to the middle of tortillas about ¼ cup then roll up and add to pan.
    2. Repeat tell all have been mad
    3. Pour sauce over the top
    Bake
    1. Preheat oven to 350F
    2. Put in oven and bake for 20 minutes
    3. Added cheese on top and let bake for about 10 more minutes or till cheese is melted

    Heating the tortillas in the sauce or the oil makes them malleable and so they don’t crack

    • Some skillet beef stroganoff has been added in to a bowl and buoy can see the pan of it behind
