Street corn is always a nice thing to have at a party or just a good side for dinner. It just takes a few simple ingredients and it is really easy to make something amazing that the whole family will love this easy street corn.
This dish is amazing with Hispanic classics or we honestly have it more with BBQ. In learning about this recipe I learned that it is called Elotes meaning corn which thought was fun.
Most of the street corn that you will see is made on the grill In this case we use a cast iron pan so that you can get a little bit of the same chare from the heat. What makes this the easy version of this recipe is that you don't have to take it off of the cob.

Variations
The kind of corn that we use in this recipe is canned corn but you can also use frozen corn you dont need to worry about letting it thaw first it will heat up in the pan. You can use fresh corn on the cob for this recipe you will want to cut off the kernels to cook.
You can also you this as a dip just need some chips and you can use if more like a salsa but you may want to add a little more sour cream and maybe some cheese
Add a protein like some meat and then use it like a salad or as the base like you would rice

- Cheese you can add sheets on top of it a lot of times people use the Cotija cheese

Equipment
- 1 skillet
- 1 spatula
- Set off measure spoons
Ingredients
- 2 cans corn
- 2 tablespoon sour cream
- 1 teaspoon chili powder
- Optional
- Lime or lemon juice for taste
- 4 tablespoon crumble cheese optional
Instructions
- Drain the fluid from the cans of corn
- Added the two cans of corn to a large frying pan or skillet on medium heat
- Let Cooke for about 2 minutes and then start mixing occasionally
- The added sour cream and mix in well
- Once mixed in add in chili powder
