There is nothing much better than a nice warm pan of warm enchiladas with its nice gooey cheese inside and out with an amazing sauce that helps bring it all together. This combination of sauce and cheese, all help together in nice warm tortillas that have an amazing flavor. They are also really easy to put together and cook in less the 30 minutes to make these amazing easy cheese enchiladas.
Cheese enchiladas were a favorite growing up. Not sure why but growing up if I could see Ribs or cheese enchiladas on the menu that is what I wanted. Not sure if my taste has changed over the years or if something has changed in place recipe but the enchilada sauce is not as sweet. My favorite was from a place called Cowboy Grub They had a really sweet red sauce but something changed still really good but had to try them all still really enjoyed them.

Simple - these are easy to make and can be made quickly
Delicious - these are delicious they have simple ingredients but come together to have an amazing taste
Great for a get-together - there is always a hit at parties that most people will love and as they do not have any meat even your vegetarian family can enjoy
Ingredients
- Cooking oil - just need a little bit in the case to help make sure that the tortillas dont stick to the pan just need a few teaspoons
- Corn tortillas - going to need at least 10 corn tortillas. They have a nice flavor that goes with them and think the ones that we use are normally about 6-8 inches
- Enchilada sauce - in this case, we use a green enchilada sauce which is more of an earthly taste if you would like to learn about different sauces look at Creations if you would like to have a sweeter flavor than a red sauce would maybe be better.
- Onion - we like to use the yellow onion in this case they tend to have a a balanced flavor they are kind of sweet
- Cheese blend what blend to use - there are a lot of different kinds of cheese that you can use a lot of people like to use the Mexican blend of cheese is which is a mixture of 3 cheeses typically. We tend to use Sharp cheddar cheese but any combination of cheese will work just have to find what you like

Variations
Protein You can add a protein but then I dont really think of them as cheese enchiladas they become beef or chicken or whatever you added but that doesn't make it wrong it just makes it different
Added beans to the mix with some pinto or black beans
Different kinds of sauce : normally you will see a red or a green sauce made from chili but you can change to a different one that don’t have a chili base for the sauce
Change the cheese that you are using we normally use cheddar but you can also us cheese blends.

You can make it the day before but I would add the sauce as the tortillas will just start to discover in it so just add it before putting it in the oven
you can store in the fridge for up to 3 days and for about 3 months in the freezer in an air-tight container

Heating the tortillas in the sauce tends to make sure that the gorillas are completely over it also tends to be the most messy option
Frying tortillas heats them up and helps bind them this in a lot of cases seems like it is the most popular but not as healthy.
Heating in plan is the option we use the most does take a little longer. We plan small am out of oil to heat the tortillas so that shrink and our more valuable it is not perfect but seems to work best for us to heat them up and not break as much healthier and not as much mess
you can use any kind of enchilada sauce that you want. Normally there are 2 kinds of sauce that are used Green and red both are based on chiles red tends to be a little sweeter as it uses riper chiles, but can be hot depending on if seeds were inculed. You can also have a tomato base sauce or cheese but those aren't as common.

Easy Cheese Enchiladas
Equipment

- 7x11 casserole pan you can use a larger one but it fits so well in this one

Ingredients
- 2 tbs Cooking oil
- 10 + Corn tortillas
- 16 oz green Enchiladas sauce
- 1 large Onion
- 3 cups Grated cheese
- 2 Tomatoes
- 2- 4 oz cans of Green chilis
- 1 cup lettuce
- ¼ cup hard cheese
Instructions
- The first thing that you will want to do is get everything together. Helps things move along smoothly This is also called Mise en place
- Preheat oven to 350
- Then prepare the tomatoes onion and green peppers so that you have a mixture to put in each enchilada you can just do it on the fly but I always add too much or too little so that they are all different if you would like to be surprised with each one then that is okay but I think it is better to get it all mixed.
You will then want to heat each tortilla so they are warm and more malleable so that they do not break when you're making them
- You will want to add some sauce to the inside
- Added some of the mixture amount few spoon fulls
- Added cheese
- Roll them up tight so that the cheese will melt they still stay together
- Place in the pan with the seam down so that they don’t open
- Repeat this with the 10 tortillas to make 10 enchiladas if you still have space then feel free to keep making them and feel it up or tell you used all the supplies.
- Pour the rest of the sauce over the top if you dont want any crispy parts on the tortilla you will want to make sure they are covered as these with chirp in the oven where they dont have sauce.
- Pun in the oven
- Add cheese to the top for the last 10 minutes
- If you have a head of lettuce you can go ahead a cut it up so that it is sliced up
- Pull out of the oven
- Added the lettuces t the top and additional chees if desired
- You can also add some tomatoes to the top or salsa if you would like
