    Eggs and Hash Brown Casserole

Published: Jul 21, 2024 · Modified: Aug 3, 2024 by Calvin Allen · This post may contain affiliate links · 3 Comments

This is probably one of the best breakfast casseroles I have ever had you have some nice crispy hash browns on the bottom and then you have eggs with that then you have a nice bit of sausage to top with cheese. This  amazing breakfast casserole is going to become a new favorite and you're going to be saying you want more eggs and hash brown casserole.

Casserole has been finished and several pieces have been removed. Can see the yellow ornafe from the cheese thrne the dark colors fmfrom the sausage and light almost white area from the potatoes

Other versions that you could try

Change up the potatoes -you could use tator totes  you could so do more cut-up potatoes.

Change the cheese -you can use any melted cheese we usually use cheese but you could also use something like pepper jack.

Change the protein - change up the topping progeny you could use bacon or ham.

Try adding some other toppings- adding some jalapeños  or tomatoes as well to it or some onions.

Pan has been greased and potatoes have been added in one layer. Sitting in a blue casserole pan

    Ingredients that you will need

Sausage - needs one pound of sauce pretty. Much any kind of flavor you like we like to use sage or maple. Gives a nice flavor to the casserole

Potatoes - you can use any of the following 2 ponds frozen hash browns thawed or 3 large potatoes or 6 medium we tend to use potatoes as they are easy to shred and we morally have them on this create the base of the casserole.  if you remove part of the water they do get more brushy when making

Eggs - helps to make the casserole nice and light and a little fluffy and helps hold it all together

Milk - helps the eggs to fluff up I prefer to use whole milk best  but my family likes 2% which works well

Garlic powder - helps to add some nice flavor if you would like to make your one you can try this recipe we found onion powder recipe

Dried minced onions - added a nice onion flavor and also had a little bit of an umami flavor

Cheese - helps hold it all together we like to use cheeder as that is a cheese we have on hand. Makes for a great topping but any melting cheese will work I also like pepper jack but the kids think it is a little to spicy.

Bell peppers- I like the flavor that they bring the color they add. I like to use the small one so that you can get different colors but you could just use one big one

Potatoes have been added and the egg mixture has been poured over it the potatoes start to darken as well

    How to make

    Get the potatoes ready

If you want you can pull the potatoes but  I don’t. If you do leave the skins on this is a good time to clean.  Then go ahead a shrewd them we use a salad shooter. Then go ahead and squeeze out the water. This helps them get crispy when baking

    Cook the protein

Going to take the sausage and go ahead a cook it  so that it is not raw as it will not get as crispy cooking in the casual and at least the time I tried to cook it with it didn’t cook

    Making the casual

Lay out the potatoes so that it is even. Mix the eggs onion and garlic and then pour over the potatoes. Then half of the cheese then the bell pepper and sausage  and then the rest  of the cheese

    Bake

Cover the casserole with tin foil and then place in the oven at 350 and let sit for an hour remove tin foil and let bake for an additional 10 minutes then pull out and let cool while waiting to seven. Then enjoy

Sausage and bell peppers have been added to frying pan and the sausage has been cooked

    FAQ

Can I make it in a slow cooker?

Yes you can make this in the slow cooker but we don’t have time time just right yet so you use this recipe if you want to in a slow cooker https://slowcookermeals.com/crockpot-breakfast-casserole/

Can I use frozen hash browns?

Yes you can use frozen hash browns but for best results, we think it is best to let them thaw

    Can I make it beforehand?

you can make it up to 48 hours before if you do we remorse that you cook the whole thing and then reheat it so that the potatoes don’t brown as much and if you want to leave and then color you will want to leave out the egg mix so just simpler to cooker it and reheat it.

Casserole is done been pulled out of the oven and you have the nice orange from the cheese get the nice red color from the bell pepper and the dark from the sausage

This was a big win at my house. I grilled some onions and fresh garlic. I didn’t have any bell peppers but I had homemade pepper mash so I put that in it and it added a lot of flavor.

      Thanks for the recipe!
