Zuppa Toscana is an amazing soup that is easy to make and only takes about an hour. It has great flavor and color and will soon be a family favorite.
I had a friend when I was trying to start this blog. I had asked for recipes and this is a soup that he recommended I try. He said this was a great one and it would get every once coming. Trying to be honest in this blog and cooking food. So I’m going to tell you a little sorry about this recipe.
We got this recipe at the beginning of the year and I put it off for months. Even when my wife got what I needed to do it. I just kept finding a reason to not be able to make it. Because I was so never about making it. I guess because I thought it would fail or I would mess it up in some way. My wife told me the ingredients were going to go bad if we waited any longer to make it. She is the one who made it happen. Even with that, we had to make some changes as we were now missing some things. Which ended up working out. I looked at the first recipe on Google as it was the same recipe we were given to make. We were really able to make it our own. So whether you would like to follow our recipe or a different one or if you would like to make changes to it. I would be happy to hear how you made it and how it turned out.
I don’t know why I get so nervous most of the time it turns out good but I guess when I share something with other people not just me that is going to have to like it. So I can just make it edible for me. I don’t think that I will share those ones with you.
But that is one thing that I hope to do is help build my confidence by cooking more and anyone that joins me on this journey if you have been on it for some time or just starting hope that you will increase your confidence and know that you can do it that is in some way what I learned from this recipe Helped me realize it is okay and even though it can be a little frightening it will be okay.
If I know a recipe and feel pretty comfortable with it. I tend to make changes to it. My mom would sometimes call this playing. When I don’t know a recipe or have something that I have not done. I just feel like I’m going to mess it up or miss something for no real reason. For me the only thing is to try and do it and learn and normally I learn it was not as bad as I thought.
Equipment needed
- Frying pan -for cooking Sauage and onions and garlic
- Large pan - used for making the soup and cooking
- Knife - need for cutting garlic, onions, and potatoes
- Cutting board - used so that you don't cut up your table or counters and make it easier to transfer in to pan once cut.
Variations
- Change the sausage or meat that you are using for a different flavor
- Changed the vegetables try peas or carrots or something else that you like.
- Change the kind of potatoes and how you cut them maybe instead of just slicing them you could cube them this will change the cooking time a little as if they are cubed they will need longer.
- Change the broth you use, try chicken or vegetable broth or we have even used a mixer of both.
Ingredients
- Broth - is the base of the soup
- Sausage - is the protein in the soup and help add a little spice
- Onion - and nice flavor and texture to the soup
- Garlic- this is used for the nice flavor that it gives
- Red pepper- helps give the soup a little heat
- Potatoes - this is the second base of the soup if you like me the first time I thought this would be too much but it worked out great. If you don't like the potato skin then you can pill them but we just left them on and it was still good but can be a little stringy
- Heavy cream - gives a nice creamy flavor and helps give the soups it caramel color
- Spinach - adds to the flavor of the soup and gives the soup some extra color
- Parmesan cheese - adds some flavor to the soup and gives it some texture this will depend on how much cheese you add

Store in an airtight container or up to 3 days or you can store in the freeze for about 3 months
If frozen let thaw before had and then heat up in the microwave or on the stove

Zuppa Toscana
Ingredients
- 1 pound mild Italian sausage
- 1 teaspoon red pepper
- 1 large onion diced or two small onions
- 1 tablespoon minced garlic about clove
- 8.5 cups of chicken or vegetable broth
- 6 medium potatoes thinly sliced
- 1 cup heavy cream
- ¼ cup fresh spinach tough stems removed
- Shredded parmesan cheese for topping Optional
Instructions
- Cook Italian sausage and red pepper in a frying pan over medium-high heat until crumbly, browned, and no longer pink, 10 to 15 minutes. Leaving some drippings.
- Cook onions and garlic in the same pan over medium heat until onions are soft and translucent, about 5 minutes.
- Move the onion mixture to a large pot. Stir in chicken broth and bring to a boil over high heat. Add potatoes and simmer until fork tender, about 20 minutes.
- Reduce heat to medium; stir in cream, cooked sausage, and spinach. Cook and stir until spinach has wilted and sausage is warmed through
- Serve and top with cheese.
