- The first thing that you will want to do is get everything together. Helps things move along smoothly This is also called Mise en place
- Preheat oven to 350
- Then prepare the tomatoes onion and green peppers so that you have a mixture to put in each enchilada you can just do it on the fly but I always add too much or too little so that they are all different if you would like to be surprised with each one then that is okay but I think it is better to get it all mixed.
You will then want to heat each tortilla so they are warm and more malleable so that they do not break when you're making them
- You will want to add some sauce to the inside
- Added some of the mixture amount few spoon fulls
- Added cheese
- Roll them up tight so that the cheese will melt they still stay together
- Place in the pan with the seam down so that they don’t open
- Repeat this with the 10 tortillas to make 10 enchiladas if you still have space then feel free to keep making them and feel it up or tell you used all the supplies.
- Pour the rest of the sauce over the top if you dont want any crispy parts on the tortilla you will want to make sure they are covered as these with chirp in the oven where they dont have sauce.
- Pun in the oven
- Add cheese to the top for the last 10 minutes
- If you have a head of lettuce you can go ahead a cut it up so that it is sliced up
- Pull out of the oven
- Added the lettuces t the top and additional chees if desired
- You can also add some tomatoes to the top or salsa if you would like
