Twice Baked Potatoes

Why we love it 

My family loves baked potatoes there easy to make and you can put them with everything. It was a game changer when we found out about twice-baked potatoes. It adds about an extra 45 minutes to your potatoes so about 2 hours in total but it is well worth it. It makes it so that your baked potato has the consistency of mashed potatoes but still gets all the amazing topping of baked potatoes

What we have found is that with twice making potatoes you still get to do your Favorite thing to the potato but it takes it to the next level and gives you a little something that we call potato skins on the side as well.

You can have Twice baked potatoes as the main course or you can have it as the time for something else but it will be a start of the either way

Ingredients you will need 

Potatoes – Russet potatoes are what we normally used and are the base of the twice-backed potato they are what hold the filling and are the  nice crisp skin 

Sour cream- is missed with the potato to create a nice creamy feeling  that is nice and smooth 

Cheese –

Garlic – helps add additional flavor for a fantastic taste

Salt – adds to the flavor

Bacon-   added flavor and different  colors 

Milk – added within to help and a creamy taste and helps with getting a smooth texture

Variations 

There is an endless variety of ways that you could make them and things that you could have with twice-backed potatoes: 

  • Cut the potatoes differently to make it a different style can just cut the top off then you can put a  little cheese on the top of the skin and have a nice treat that has been our favorite some people like to cut them in half and make more with doing less 
  • Change it up and add some different toppings try onions  
  • Change up the protein:
  • Change the cheese: we normally use cheddar cheese but you could also try blue cheese or pepper jack 
  • If you have some bacon grease try adding it instead of the butter.

Ingredients: 

6 Potatoes 

½ cup Sour cream

½ cup Cheese

1 tbsp Garlic salt

½ cup Milk

3 slices of bacon Bacon

Butter enough to rub on the outside it will very or us bacon grease if you have some.

Chives( optional)

Jaulapionos (optional)

How to make it 

  1.  Preheat oven to 400
  2. Wash the potatoes 
  3. Put butter on the outside of the potatoes to help crisp them up as they cook. Another option is to put bacon grease on the outside from cooking the bacon
  4. Place potatoes in the oven for one hour
  5. After the hour pull out potatoes and cut off the top probably going to want hot pads for this. Once the tops are off you are going to take a spoon and scoop out the insides be careful not to break the skins too much as this will make it harder to fill them
  6. Once you have the insides in a bowl you are going to add the milk garlic salt and part of the cheese and any other thing you would like to add to the mixture for the mashed potatoes fill the mix tell it is like mashed potatoes 
  7. Once you have it all mixed you will take and start feeling up the skins you will want to place them in a pan so if there is any run off it doesn’t go to the bottom of the oven if you
  8. Once they are filled then added a little garnish of cheese and bacon (to help it crisp up) may also want to add the jalapeños or chive or other garnish at the end cook for about an additional 20 minutes or till the top starts to brown
  9. Pull out they should be ready to eat just add any other things you would like at this time

What do you have with twice-baked potatoes 

These go well with many things you can have this as a main core and just have or you can have it with one of your favorite proteins this is normally how we do it.

How can you save leftovers?

If you have a container or a zip lock bag you can save these in the fridge for up to 3 days you will want to wait till they cooldowns that you don’t get the extra moisture
