    Scrambled Egg bites

    Scrambled eggs have always been one of my favorite breakfasts and there is a lot that you can do with that and you can make it in many different forms. I new form that we have been making that can be great if you're on the run or for meal prep is egg bits. This makes a scrambled egg that you can fit in your hand and that will hold up these are great to put in the freezer as well so that you can eat them later check out this great recipe for scrambled egg bites. 

    The reasons that you will love these:

    They are straightforward to make and they are something that the whole family can enjoy. If you want you could make each one differently. This helps with the pickiest eater in our family who does not like anything in his eggs so they have just to be plain.  

    They are also a great reminder of the little quiches that we would have as kids, they just dont have the crust. 

    They can be great to keep in the fridge or put in the freezer for a later date and then easy to reheat them. When you want to use them 

    This is also a great option so that you do not have to take the time or the expense to go to Starbucks and get their egg bites. Save some money and time by making them ahead of time and having them ready to go when you want to and it also makes it so that you can have them any time you want.

    Variations 

    I think for me there is an endless number of ways that you  could see making these just like I think that you can make scrambled eggs or just eggs in many different ways :

    Add  an additional protein to it  like bacon or sausage you will need to cook this before making the egg bites 

    Change the  vegetable that you so that you have your favorites 

    Change the cheese that you use for a different flavor 

    Have some fun and make it your own that is one of the things that I find fun about cooking is that you can learn how to make things and then learn what works best for you.

    Cooking notes 

    When making these it can be hard to get the right amount even with measuring as things are not always going to have the same gap so we normally start with  7 eggs and if we need more then you can quickly make some more egg mixture to fill in the rest normally thing turn out right 

    If you put in too much mixture then you may just want to make some scrambled eggs as you dont it to overflow in the oven as long as you are just below the top then you should be good then.

    Can you freeze egg bites? 

    Yes, they are a great option to freeze

    How to store Scrambled egg bites?

    You should store them in an air-tight container there are top options if you are going to eat them. within the next 4 days then keep them in the refrigerator.
    If you are going to keep them for longer you will want to freeze them in a Freezer safe container  and group them in the number that you want you would beagle to keep them for a couple of months

    How to reheat?

    Heating the microwave is the easy way but you will have to do it in small amounts about 10 seconds at a time. I have also been told that defrost and half-power work well too.
    If you heat in the oven then heat up to 350 and leave for about 10 minutes.

    Scrambled Egg bites

    Ingredients Equipment Method Notes

    Ingredients
      

    • Cooking spray
    • Ingredients
    • ½ cup tomato diced
    • ½ cup Onion diced
    • ½ cup Grated cheese cheese
    • 9 large eggs
    • Season - salt and pepper
    • ¼ cup milk

    Equipment

    • 1 muffin pan
    • 1 Mixing bowl

    Method
     

    1. Spray or grease the muffin pan
    2. Preheat oven to 350
    3. Fill each muffin tin with your topping about two tablespoons in total
    4. Crake the eggs into a large bowl
    5. and milk with the seasoning to bowl with eggs
    6. Then added to each tray a little below the top
    7. Bake in the oven for about 20 minutes at 350

    Notes

    If you dont have enough egg mixture then just mix an egg for each  and just a little milk

    • This is the square image has monkey bread sitting in front of the other monkey bread with the inside burning out. Have a nice color, light and fluffy and see a dark layer caramel on side of the other monkey bread it does look a little bit dark on this one. We were a little bit close to burning it. Luckily, we didn’t go outside. It will be a little bit harder or the inside of me kinda nice gooey.
