This amazing Easy Slow Cooker Pot Roast. Is slow cooked to perfection and is the perfect combination of beef vegetables and potatoes. It is perfect of anytime you want an amazing meal.

Ingredients
  

  • 1 tablespoon olive oil
  • 3-4 lb chuck roast or rump roast
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 6 large carrots peeled, halved lengthwise, and cut 11/2-2" long
  • 2 medium red onion large dice
  • 1 lb russet potatoes
  • 6 carrot but in half and cut about 1 inch
  • 5 cloves garlic minced
  • 1 teaspoon dried thyme
  • cups beef broth
  • 2 tablespoon yellow mustard
  • 1 teaspoon basil
  • 1 teaspoon onion powder

Method
 

  1. Season all sides of the roast with salt and pepper
  2. Heat large skillet to medium high heat sear each side of the chuck roast for about 3 to 5 minutes this is the Browing, the meat and help bring out extra flavor. add oil if necessary
  3. Add cuck rost to slow cooker place carrots, potatoes and onions around roast
  4. Added beef brooth,mustard, basil,thyme and onion powder to skillet and mix tell combined. Pour over meat and vegetables.
  5. Cover and let cook for 8 hours on low
  6. Remove the meat from slow cooker and cut in thick slices
  7. Plate and then added vegetables
  8. You can make gravy out of juices by cooking down the juices from the slow cooker. Which is delicious addition
